Tomato Florentine
     Tortellini Soup: 1 TBS Butter
                                3 cloves garlic (chopped fine)
                                8 oz. cheese tortellini
                                3 10oz. cans chicken broth
                                14 1/2 oz. can stewed tomatoes (can use tomato or V8 juice)
                                1/2 bunch spinach (stemmed)
                                6 leaves fresh basil (1 tsp dried)
                                1/4 cup parmesan cheese
                                Saute the garlic in the butter 2 mins. over medium heat (do not burn).
                                Stir in the broth and trotellini.  Bring to a boil.  Reduce heat and mix
                                in parmesan cheese, salt & pepper if desired.  Simmer until pasta is
                                just tender.  Stir in the tomatoes, spinach and basil. Simmer for 2 more
                                minutes. Serves 4 to 6.  Good with garlic bread!
