Salsa Fabrics Quilter's Quickest Recipes

Marvelous Mexi-role:   1 lb. ground chuck
                                        1 pkg. taco seasoning
                                        1 can refried beans (fat-free)
                                        1 can black beans
                                        1 can whole corn (or sm. frozen)
                                        1 can crushed or stewed tomatoes (mexi-style)
                                        1 jar mushrooms
                                        1 can sliced black olives
                                        1 chopped onion (optional)
                                        Colby/jack marbled cheese or pre-grated mexi-cheese
                                        Spray large casserole with Pam.  Preheat oven to 425°.
                                        Stir and heat refried beans and 1/2 can tomatoes in heavy
                                        skillet until smooth.  Spoon into casserole.
                                        Cook meat in same skillet and drain.  Put meat, remaining
                                        tomatoes and taco seasoning in skillet.  Stir and heat through.
                                        Spoon on top of the beans in casserole.  Add remaining
                                        ingredients and top with cheese.  Cover with foil and cook
                                        for 25 minutes.  Remove foil and broil till cheese is bubbly
                                        and a little bit crunchy.
                                        Serve with tortilla chips, lettuce, salsa, sour cream, etc. or wrap
                                        in a tortilla and top with cheese.   Enjoy!
