Salsa Fabrics Quilter's Quickest Recipes

High Protein Italian
Vegetarian Feast:

                                       2 lg cans diced tomatoes with Italian seasoning
                                       2 cans of cannelli or other white beans drained
                                       2 cans mushroom pieces drained  (optional)
                                       Simmer 5 minutes.  Stir in 3 cups of frozen spinach
                                       (from a bag)  Cook for 5 minutes more.  Serve over
                                       penne or other pasta.  Top with crumbled feta cheese.
                                       Makes 4 to 6 large servings.
