Barbara's Cheese
Pastry:

1 pkg. Pillsbury pie crusts (already rolled out)
                                       1/4# Muenster cheese, shredded
                                       1/4# chedder cheese, shredded
                                       2 eggs, slightly beaten
                                       1/8 t. cayenne pepper
1/4 c. to 1/2 thinly sliced green onions
                                       1 cup chopped ham

Unfold one pie crust and place on large baking sheet.  Combine
shredded cheeses, cayenne and eggs; put cheese mixture on
flat pie shell, leaving rim 1/2" clear.  Scatte ham and green onions
on top of cheese.  Top with second pie crust; seal edges of pie
shells with fork.  Cut a few slits in top of crust.  Bake at 350 degrees
for 35 minutes, or until well browned.  Cut pastry in squares (a pizza
cutter works very well) and serve with Tabasco sauce.
You may substitute cooked chicken and chopped green chiles for the
ham and green onion.  You can't believe how good this is!
