Salsa Fabrics Quilter's Quickest Recipes

                     Skillet Moussaka:

                               1 pound ground meat (lamb, beef, or TVP soaked in vegetable bouillion)
                               1 medium onion, chopped
                               2 garlic cloves, minced
                               1 large eggplant cut into 1/2 inch cubes (peeling is optional)
                               1 small can tomato sauce
                               salt and pepper to taste
                               1 teaspoon Italian seasoning
                               Feta or other favorite cheese topping
              
                               Brown meat with onion and garlic until onion is transluscent. 
                               Add eggplant, seasonings, and tomato sauce.  Cover tightly
                               and simmer until eggplant is tender.  Cheese may be grated/crumbled
                               on top for garnish.  Serve with a salad and garlic bread.  Enjoy.  Serves 4-5.
