Quick Sausage and Pasta:
In deep pan with small amount of olive oil, lightly cook
1 medium chopped onion and three cloves of garlic.
Add the meat from four links of sweet or spicy Italian sausage.
(Just squeeze out the sausage meat from the casing.)
Cook until meat is no longer pink. Add 1/4 to 1/3 cup of red wine.
Simmer mixture until most of the wine has boiled off. (about ten minutes)
Add 1 small can of tomato paste and 1 28oz can of diced tomatoes.
Mix well and add 1 tsp of thyme and 1/2 tsp of Italian seasoning.
Cook for 30 minutes. Serve over cooked penne noodles.
