Salsa Fabrics Quilter's Quickest Recipes

Microwave
Ratatouille:                  
                                     2 med zucchinis
                                     2 med yellow squash
                                     1 green pepper
                                     1 sweet red pepper
                                     1 can diced tomatoes, drained *or* 2 med. tomatoes
                                     1 sm. eggplant
                                     1 med onion
                                     2 cloves garlic
                                     1 tsp parsely
                                     1 tsp basil
                                     1/8 cup olive oil
                                     1/4 cup parmesan cheese
             
                                     Slice all veggies thinly and drain diced tomatoes if using canned.
                                     Mix onions, olive oil, garlic, and herbs.  Spread half of this mix
                                     in shallow microwaveable dish.  Layer 1/2 of veggies on top of
                                     onion mixture.  Sprinkle 1/2 of parmesan cheese on top.
                                     Repeat layering, using other half of ingredients.  Microwave
                                     loosely covered for 10-15 minutes, then check for doneness.
                                     If required, microwave more.  As an alternative you can use
                                     an oven-safe dish and bake at 350 degrees for 25-35 minutes.
