Salsa Fabrics Quilter's Quickest Recipes

Italian Sausage
            Frittata:     1/2 lb. Italian sausage
                              3 T. butter
                              2 cups frozen hash browns
                              6 eggs
                              1/2 cup salsa
                              1 cup shredded mozzerella
                              1/2 t. salt
                              1   t. pepper
                              Cook sausage in oven-proof skillet.  Drain on paper towells and
                              set aside.  In the same skillet, melt butter over medium heat and
                              stir to coat sides.  Add hash browns and cook for 5 minutes, stirring
                              occasionally.   While potatoes are cooking, mix eggs, salsa, 1/2 cup
                              of cheese and spices in bowl with a fork.  Pour into skillet, add
                              sausage and stir.  Reduce heat to medium low, cover and cook for
                              6-8 minutes until almost set (center will be loose).  Uncover, top
                              with remaining cheese and broil in oven for 3-5 minutes until set
                              and cheese is melted.  Serve with rolls and green salad or with toast
                              and fruit for breakfast.  Enjoy
