Ground Beef Egg Plant:
Filling:
1 1/2 lbs. ground beef
3/4 cup onion -- chopped
1 can tomatoes, canned whole
2 1/2 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. pepper
2 lbs. eggplant 1/2"
slices
(salt & pepper both sides)
Sauce:
3 T. margarine
1/4 cups flour, all-purpose
2 cups milk, 1% lowfat
1/4 tsp salt
2 large eggs -- slightly beaten
1/2 cup parmesan cheese -- grated
Coat
12 x 7 1/2 inch shallow baking dish with non-stick cooking spray.
Place
layers of eggplant and meat mixture in pan. Top with sauce, bake
350
degree oven for 35-45 minutes or until hot and bubbly through.
