Fettuccine with Spicy
Tomato-Cream Sauce:
    
                                         1 Tablesppon Butter or Margarine
                                         1/4 cup minced onion (optional)
                                         1/4 to 1/2 teaspoon red pepper flakes
                                         1/2 teaspoon salt
                                         2 cans (14 oz each) whole tomatoes, undrained
                                         1/3 to 1/2 cup heavy or whipping cream
                                         1 package fettuccine
                                         Freshly Grated Parmesan cheese
                                        
                                         Melt butter in large skillet; add onion and  red pepper flakes;
                                         cook over medium-low heat until tender (5 minutes).  Add
                                         tomatoes and salt;  cook over high heat, crushing tomatoes with
                                         spoon, until almost dry (8 to 10 minutes).  Stir in cream and  bring
                                         to boil; boil one minute.  Meanwhile, cook fettuccine according to
                                         package directions; drain.  Toss with sauce; serve with Parmesan
                                         Cheese.   Serves two hungry adults plus two kids that don't really
                                         like anything but  hot dogs...plus a little leftover for lunch.
