Salsa Fabrics Quilter's Quickest Recipes

  Fabulous Frittata:
            
               Ingredients:
               3 whole eggs, 3 egg whites (add more if feeding more people)
               broccoli florets (1 1/2 -2 cups)
               2 red peppers (yellow, green or orange for more color)
               1/4 cup diced onion
               1 cup (or more) sliced mushrooms
               (Note:   I don't normally measure--just throw in as many veggies as
                I can fit in a 10" teflon pan)
               shredded mozzarella (2 handfuls)
               grated white cheddar (1-2 handfuls)
               (whatever amount of cheese you like or diet permits)
               oil in spray can (you can use PAM if you like)
               salt and pepper to taste
               salsa (I buy a prepared one)
               *You can add potatoes or other vegetables if you like.
              
               Directions:
               1. Put broccoli florets in large microwavable pan with a few
                   teaspoons of water; microwave for three minutes
               2. Chop peppers, slice mushrooms , dice onion, shred/grate cheese
               3. Set oven to broil High
               4. Spray oil pump into pan
               5. Add broccoli, peppers and onions to pan, stir-fry.
                   Add mushrooms just before you add egg mixture
               6. Beat eggs and add a smidge of water to egg mixture and
                   add to pan.
               7. Cook for a few minutes until most of the egg mixture looks
                   formed on top.
               8. Sprinkle cheese over top and place pan in broiler (leave door                     slightly open)
               9. Check on frittata in a few minutes (I like my cheese to look                     toasty-brown but you can remove it before.
              
              The frittata will easily slide onto a large dinner or serving plate.                Serve with salsa.  You can serve this with tortillas or bread or rolls
