Salsa Fabrics Quilter's Quickest Recipes

Chicken Pineapple:
                                    2 or 3 boneless, skinless chicken breast halves
                                    1 can of pineapple chunks with juice
                                    3 Tbls Soy Sauce
                                     1 tsp vinegar
                                     1 Tbls Cornstarch
                                    Cut up chicken into 1" pieces and dredge in flour with
                                     salt and pepper to taste.  Put chicken in hot oil in deep
                                     pan and cook until browned.   
                                     Drain juice off of pineapple and save in 2 cup measuring cup.
                                     Throw the pineapple into the chicken, cover and cook 5 minutes.
                                     Add soy sauce, vinegar, and cornstarch to pineapple juice and
                                     stir the liquid into the chicken and pineapple and cook a minute
                                     until it starts to thicken.   Serve over rice with green salad or
                                    spinach on the side.
