Salsa Fabrics Quilter's Quickest Recipes

               Stove Top Beef/Potato Casserole:
              
               1/2 to 3/4 pound ground beef
               small onion, sliced
               small amount of oil for browning above
               approximately 1/2-3/4 cup shredded cheddar cheese
               1 or 2 small russet (or baking) potatoes, diced or sliced fairly small
               1/2 cup frozen green peas (optional)

               In a large frypan (one that has a lid to fit) stirfry sliced onions in small
               amount of cooking oil until translucent--medium heat. Add ground beef
               and stir cook just until it loses the red color, not brown.
               Throw in the diced or sliced potatoes Stir around until they start to look
               somewhat golden. Stir in salt and pepper to taste.
               Now turn the heat down as low as you can get it and cover the pan.
               If the mixture seems to dry at this point, sprinkle a little water over the top
               not too much though--then cover. Let simmer at low heat for approximately
               20 minutes uncovered and stir with spatula or pancake flipper.
               Make sure the potatoes are tender. Add the frozen peas.
               Then turn the heat up to medium high to crisp up the potatoes a bit.
               Turn heat off but leave pan on burner. Then sprinkle cheese over the
               top and put the lid back on for just a few minutes while you get the table set.
